About the Wine: The Ammunition Wine 2016 Sauvignon Blanc is made from 100% Sauvignon Blanc grapes harvested from two single vineyards — one from the Knights Valley AVA, one from Sonoma Valley AVA. The wine was aged in 100% stainless steel tanks for 6 months.

14.2% ABV

Flavor Profile: Twist off the cap of the Ammunition Wine 2016 Sauvignon Blanc and breathe in the aromas of white peach and white nectarine straight away. On the pour and in the glass, this light white wine is the color of the faint but luminescent yellow of the morning sun.

As you pour, you can’t not smell the stone fruit scents radiating from this Sauvignon Blanc — throw in just ripe apricot among those white peaches and nectarines. Stick the nose in the glass and sense the clear line of acidity running throughout the wine, telling you there’s more yet to be revealed. So swirl and sniff again to release the wine’s minerality of wet stone, mossy rocks, water lilies, and the utter liveliness of those fruits.

On the palate the Ammunition Wine 2016 Sauvignon Blanc is as smooth as gently streaming river water. As dominant as those fruit flavors were on the nose, this Sauvignon Blanc is not overly fruit forward on the palate at all. Instead, those aromatics linger delicately in the background, while the earthy elements become the main scene and setting: the grass, the flowers, the leaves, and even the pips of those stone fruits.

The finish is a lingering one, a tingling one, inviting another sip, another glass, another bottle!

Food Pairing: The first time I enjoyed the Ammunition Wine 2016 Sauvignon Blanc, I simply enjoyed it as an aperitif while cooking dinner. Indeed, this Sauvignon Blanc is so light, refreshing, and crisp, it can be enjoyed on its own like a cool glass of water.

The second time I enjoyed the Ammunition Wine 2016 Sauvignon Blanc, I paired it with a spicy bean, cheese, and rice burrito and a side salad. This wine loves spicy foods. Again, because it is so crisp and clean and because those fruit flavors remain in the background, allowing the minerality to take center stage, it perfectly cuts through funky vegetables like jalepeño peppers and the thickness of refried beans without any flavor fighting between food and wine.

Perfect pairing? Heck yes. Besides, the Ammunition Wine 2016 Sauvignon Blanc is so fun and casual, you’re going to want to pair it with a laissez faire mid-week meal like this.
