This is a little sneak peek post. This wine isn’t officially on sale until next month, but hey, why not start planning your summer sipper shopping list now? In all seriousness, though, this wine is called passion because that’s what winemaker Cindy Cosco has—serious passion for her craft. Solid body, packed with complex flavors and textures, this is a full-on white wine blend for the kids that don’t think they like white wines or are hesitant to pair white wines with a substantial meal.
Flavor Profile: Straight-away this beautiful blend emits strong floral aromas along with soft honey notes, a dose of mandarin citrus, and just an aura of dusty earthiness. The palate has a round body, soft acidity, and a subtle, an almost teasing, texture that just gently touches the top of the tongue. The initial dominant flavors are reminiscent of a freshly baked stone fruit gaellette: mango, yellow peaches, notes of agave nectar, all enveloped in a wheat-y, nutty pastry crust. But take your time with the wine and find secondary characteristics that speak of light-petaled flowers like chamomile and jasmine. Well-rounded, well-balanced, and intriguing to say the least—you’ll find yourself sipping this wine again and again just to figure it out…
Food Pairing: I paired this white Rhone-style blend with a seared halibut fillet served on top of cauliflower purée and topped with toasted coconut flakes and edible flowers. Pretty and tasty just like the wine. Yes, I loved this pairing, the more tropical notes seemed to come out as the evening progressed—in fact I got a strong banana aroma and flavor I didn’t get the first time I tasted this wine. This is certainly a fuller white wine that is most suited to a food-pairing situation and I highly recommend a dish much like this.
