Basic Savory Pastry

Prep Time: 10 minutes

Yield: One 9 - 10 inch pie pan

This a simple recipe for savory pastry dough. Use this dough for savory quiches, tarts, or meat pies.

Ingredients

  • 225 grams all-purpose flour
  • 100 grams cold, unsalted butter, cut into cubes
  • 1/8 teaspoon salt
  • 2 to 3 tablespoons ice water

Instructions

  • Sift the flour into a large bowl.
  • Add the cold butter cubes to the bowl and massage it together with the flour until the mixture resembles fine crumbs.
  • Mix in the salt.
  • One tablespoon at a time, add the ice water to the flour mixture and knead until it comes together in a smooth dough.
  • Wrap in plastic wrap to chill for at least 30 minutes before using.
