Pineapple Cake

The inspiration for this recipe simply came from some leftover pineapple. I had bought pre-packaged, pre-sliced pineapple and had about a cup of it left — just sitting there in its own juices. So I figured I may as well make something out it instead of letting it go bad.

I’m calling this “pineapple cake” because, although I did follow steps similar to that of a pineapple upside down cake, the cut of pineapple I used as well as the batter I created resulted in a light, fluffy, yet moist cake with the juicy fruit scattered throughout. (more…)

Vanilla Bean Panna Cotta

4 ingredients and a little gelatin, and you’ve got what contestants on MasterChef struggle with almost every episode — a beautifully light panna cotta. That’s why I usually opt to make my own. But when a celebratory work event dictates your lunch will be pizza, you may as well go all in and try what the restaurant has to offer. Now, this is by no means a restaurant review of Delfina, but suffice it to say I highly recommend it and hope to return again. If anything, for the broccoli rabe pizza…

Light Brioche Buns

You were looking at my Turkey Burger recipe and wondering about the bun, weren’t you? No, I didn’t buy them at the supermarket — I have this thing about fresh baked bread (love love love it), so I can’t resist every opportunity to make it. Burger night is no exception.

Brioche Rolls

The inspiration for making these was a restaurant that, sadly, does not make these anymore. But back in the day, they had the best turkey burger I had ever had. I guess the good thing about a restaurant not making your favorite dish anymore is that if you want it, you’re kind of forced to learn to make it on your own…
